I love tomatoes especially in the spring and summer time. Fresh heirlooms from the local farmers markets are possibly my very favorite variety. This tomato gratin recipe is such a great light summery dish, and its quite beautiful too!
Easy to make it will take you about 30 minutes from start to finish.
Ingredients:
1/4 Cup bread crumbs
1 Tablespoon (2 cloves) minced fresh garlic
1-2 Tablespoon extra-virgin olive oil
1/2 Cup shaved Parmesan cheese blend
4 Medium heirlooms tomatoes, sliced 1/4" thick
1/4 Cup chopped fresh basil
1/2 Teaspoon freshly ground pepper
1/4 Teaspoon salt
Drizzle balsamic glaze

Directions:
1) Preheat oven to 450°F. Coat a shallow baking pan with nonstick spray.
2)
Mix bread crumbs, garlic, basil, salt, pepper, and cheese in a mixing bowl.
3) Layer tomato slices in the baking dish, sprinkling each layer with the mixture.
4) Bake the tomatoes for 15 minutes; Remove from oven, plate, and drizzle with balsamic glaze.
Serve immediately.
Tip: This dish is extra tasty served over a bed of arugula.
